In 1999 the Swiss Brewery Locher of Appenzell started distilling barley spirit after the Swiss legal system had allowed to distil spirits from grain. The barley is from the Swiss Alpine Region, grown and malted locally. The whisky matures in used oak wood beer casks which can be as old as 120 years. The beer casks are from Switzerland, Germany, Austria and other European countries.


Locher Brewery is owned and has been run by the Locher family for five generations.


The first Säntis Malt- Swiss Highlander - was released in 2002. Seven years later Jim Murray named the peated expression Säntis Malt Trinity to be European Whisky of the Year 2010. One year later the distillery was voted Whisky Distillery of the Year by Whisky Guide (published in Switzerland).


The peated version Dreifaltigkeit -Trinity - is smoked with peat from the nearby Gonton moor and beech wood after the dried malt is wetted again. The fermentation period is 120 hours. The wash reaches 6%-8% A.B.V. The low wines have got a strength of about 25% A.B.V. The still with a boil pot and a column on top is from Germany and was manufactured by Arnold Holstein GmbH, Markdorf.
